The Whole System, Not Just the Hood

A hood without proper exhaust is furniture. We build the complete chain: Type I hoods for grease and smoke, Type II for heat and steam, upblast exhaust fans sized to the appliance lineup beneath them, and welded grease duct runs that meet code from the filter track to the fan.

Then comes the part most contractors skip: makeup air. Every cubic foot the hood exhausts must come from somewhere. Without designed makeup air, kitchens go negative — doors whistle, pilot lights snuff, the dining room turns into an accidental wind tunnel, and the AC loses a fight it never agreed to. We engineer the balance so the kitchen breathes in as well as it breathes out.

Do we need a Type I or Type II hood?

Type I over anything producing grease or smoke — fryers, grills, ranges, charbroilers. Type II over heat-and-steam equipment like dishwashers and some ovens. Most cooking lines need Type I; we will confirm against your appliance schedule and local code.

Why does our kitchen feel hot even with the hood running?

Usually inadequate makeup air or an exhaust fan that has lost performance. The hood pulls conditioned air out; without designed replacement air, the kitchen runs hot, negative, and miserable. An airflow assessment finds the imbalance quickly.

Can you install ventilation in an existing building?

Yes — retrofits are much of our work. Routing duct through an existing roof structure while meeting clearances takes experience, and we bring plenty of it, along with the permits.

How often should kitchen exhaust systems be serviced?

Filters need attention weekly to monthly depending on volume; fans, belts, and airflow quarterly. Duct cleaning frequency is set by NFPA 96 based on cooking type — solid-fuel and high-volume operations more often. We build the schedule to match your line.
